Keep stirring till absorbed. Repeat process till rice is almost fully cooked. Then add in cheese to taste and optional butter and chives. The stock will be salty so you probably don’t need to add salt but add some fresh ground black pepper to taste. Depending on what you serving it with adding that now too. Could be mushrooms, seafood, or whatever you want. Anything you don’t want mixed leave out till plating. Being a rice dish at its core you can serve it with most things and while laborious if done right is heavenly.
